How to make 'Dalgona(honeycomb)' of squid game?


Honeycomb or Dalgona is a game that Koreans often enjoyed when they were young.
Making it itself is easy, but it can be difficult if you adjust the time incorrectly.


Ingredients

sugar 20g, edible baking soda 1g, water 4g


How to make?

1. First, measure sugar, baking soda, and water according to the quantity you want.

2. When the ingredients are ready, add 20g of sugar and 4g of water in a ladle or a pot and boil it over high heat. (Be careful not to stir with chopsticks or spoons to melt faster.)


3. When the sugar water starts to boil and has a slight brownish color, turn off the heat and stir it quickly after adding 1g of edible baking soda. (If you turn off the heat too late, the sugar will burn, so please make sure the timing is right.)


4. If you turn off the heat and add more soda, it will swell up like the picture above. Don't worry about swelling and keep stirring quickly.

If you add less than the suggested amount of edible baking soda, it doesn't swell well, so it's better to add it in a proportion as much as possible, and when you put edible baking soda into sugar boiled for a long time, it may taste burnt.


5. Pour the dalgona over a coated pan or cooking pan so that it can be separated well.

When the dalgona is hot, use a flat tool to press it flat for about 5 seconds, and then use various types of molds before it cools down. 

When the dalgona starts to cool down, it hardens quickly, so press it with a flat tool and then press it quickly to capture the shape.

For your information, when press it with a flat tool and if you remove it too quickly, the dalgona won't fall off neatly and can come up as it stretches. On the contrary, if it cools down too much, it may not take shape well, so please be punctual.
